1st time building a H. Minarelli...Tips or Advice???

I've finally got enough parts to start on my horizontal minarelli build. Here is a list of stuff I have so far:
Stage6 Race BBK
Stage6 HPC crank
Stage6 bearings
Stage6 V-Force Reeds
OKO intake manifold
Mikuni TM24 Carb
Malossi Multivar
Hebo Red center clutch spring
Malossi MHR replica Pipe
Stage6 Belt
Kundo Clutch bell
Stage6 Clutch
I plan on doing the install of everything myself and feel pretty confident with the bolt on's, but am a little scared of splitting the cases. I will get over my fear and get her done. Is there anything I should do while I'm inside the engine? Besides a tusk crank tool and flywheel puller, any other specialty tools needed? I plan on doing the heat/freeze method during the install of the crank. What jets should I try to start with for initial break-in? How about rollers? I was told to run 21 grams, sound good?
Any other tips or tricks to help me do things smoothly? Any help is greatly appreciated.
